Organiczna Kawa NEFISI
Pochodzi od społeczności rolników Heileslassie Ambaye z regionu Yirgacheffe w południowej Etiopii, czyli praojczyzny kawy. Uprawiana na plantacjach z certyfikatem ekologicznym, na których nie stosuje się nawozów sztucznych oraz pestycydów. Ziarna kawowca rosną w dżungli DAWA, w cieniu drzew na wysokości przekraczającej 1500 metrów n.p.m. Są zbierane ręcznie i pozyskiwane metodą “na mokro”.
Za bogactwo smaku i aromatu tej ekologicznej kawy odpowiada etiopska odmiana Arabici o nazwie HEIRLOOM. Ziarna te występują również pod nazwą “etiopskie dziedzictwo”. Są koloru szaro-zielonego, są mniejsze oraz o nieco bardziej wydłużonym kształcie niż ziarna arabic amerykańskich. Objęte są ochroną prawną przez rząd Etiopii i nie mogą być uprawiane poza tym krajem.
Bio ziarna Heirloom z Sidamo mają rozbudowany profil smakowy. Znajdziemy w nich wyraźne nuty owocowe: cytryna, kumkwat oraz kiwi; zrównoważą słodycz, małą gorycz oraz kwasowość charakterystyczną dla afrykańskich odmian arabici.
Do etopiskich ziaren dodajemy ziarna z Meksyku, na bogactwo aromatu, których składają się takie odmiany Arabici jak: Bourbon, Sarchimore, Cattura, Geisha oraz Oro Azteca. Charakteryzuje się pełnym smakiem i łagodną kwasowością.
